vegan raspberry mousse tart
I made this tart because I was feelin’ something fruity 🍓🥥 As I was looking for recipes, the color of this Raspberry Mousse Tart by Delight Fuel immediately popped out to me. I liked the idea of making a fruit mousse to fill the tart, and I was curious how one would make it vegan. This recipe called for canned coconut milk and cashews to add that creaminess for the mousse (I used pine nuts because I didn’t have cashews).
Visually, this tart hit it out of the ball park! And my family gobbled it up in about 24 hours ;)
Note: If you have trouble getting the cashews/nuts to a creamy consistency, try adding a bit of plant-based milk to the food processor/blender. Also, you can substitute the agar powder with corn starch.
