smoked salmon & scallion egg sandwich
How’s quarantine going for you? On my end, I’ve been listening to podcasts, running 6 ft. apart from people, reading, flipping through cookbooks, writing, and watching shows. Being at home has also given me a chance to cook and bake more.
This morning, I woke up knowing that I wanted to make myself an egg sandwich for breakfast. I’m a huge fan of lox bagels. I loovveee the combination of smoked salmon, cream cheese, and onions. This is my take on a lox bagel in egg sandwich form. I wanted to create an egg scramble with those same delicious flavors. I also added some spinach and beans to give the scramble more substance (I also just love spinach and beans in my eggs). Try it out! :)
Smoked Salmon & Scallion Egg Sandwich

Makes 1 sandwich
Directions
Heat and spray oil on a nonstick pan. Whisk eggs and a splash of water in a bowl.
Prepare your ingredients. Put bread in toaster. Chop scallions, rinse spinach, and rinse beans. Pour eggs into pan. Add the smoked salmon, scallions, cream cheese, spinach, white beans, and paprika to the eggs.
Once eggs are scrambled, slide them onto a slice of toasted bread, and top with other slice. Cut in half, and enjoy!
