Spiced Garbanzo Beans with Caramelized Onions and Sautéed Spinach

Serves 2
Ingredients
15.5 oz (1 can) garbanzo beans
2 tbsp. olive oil, plus more to top
Half of a white onion, chopped
1 cup shiitake mushrooms, finely sliced
2 tsp. cumin
2 tsp. smoked paprika
Splash of water
2 cups spinach
Sea salt, to taste
Directions
Heat 1 tbsp. of olive oil in a medium non-stick pan. Add the onion, mushrooms, cumin and smoked paprika, stirring occasionally until caramelized.
Drain and rinse the garbanzo beans. Add the beans to the pan, and stir occasionally for about 5-10 minutes. If the mixture starts to look dry, add some water, a tablespoon at a time. Adjust the spices if needed. Add the spinach. Once the spinach wilts, turn off the heat.
Serve in a bowl, and top with a drizzle of olive oil. Enjoy!!
